Watermelon and Feta Skewers

SERVES:    4-6

COURSE:  Starter

This classic combination of sweet, juicy watermelon with tangy, pleasantly salty feta cheese makes a beautiful presentation. The richness of the balsamic and herbaceous flavor of the mint pull it all together deliciously.


  Ingredients

  • 1 baby watermelon
  • 1/2 lb. feta
  • 1/2 cup fresh mint leaves
  • 1/4 cup balsamic drizzle
  • Salt and pepper, to taste
  • Skewers

Instructions

  1. Cut off the top and bottom of watermelon so it’s able to stand tall on your cutting board on the cut surface. Using a sharp knife carefully remove the rind from the watermelon in a downward motion following the curve of the fruit.
  2. Cut both watermelon and feta into bite-sized cubes. Thread watermelon and feta onto skewers, alternating fruit and cheese however you choose.
  3. Roll mint leaves and thinly julienne to create ribbons.
  4. Place skewers on serving platter and season with salt and pepper. Drizzle with balsamic glaze and top with julienned mint.
